Passion Fruit/ Passion Fruit Syrup
Monosaccharide Syrup
Lemon Juice
Aged Rum
Egg White
/ Ice Cube
Procedure:
- Add a spoonful of autumn pear syrup into the shaker
- 10ml passion fruit syrup
- 10ml monosaccharide syrup
- 15ml lemon juice
- 45ml old rum
- Moderate egg white
- Moderate mixing
- Whip the cream
- Add ice cubes
- Vigorously shake
- Filter into the butterfly cup
- Decorate with pear slices and passion fruit
Pear a Kiss 
Ingredients:
Basil leaf
/ Sliced Pear
Crushed Ice
Elderflower Syrup
Lemon Juice
Mixed juice of pear and pear juice
Gin
/ Lychee
Procedure:
- Pat five pieces of basil leaves
- Release fragrance
- Put in the cup
- Add crushed ice
- Pour 15ml elderflower syrup
- 5ml lemon juice
- 40ml pear and lychee mixed juice
- 300ml dried apricot soaked gin
- Stirring well
- Topped with crushed ice
